There are not many nations that can say their national dish has become an international phenomenon. Italy has two such dishes, pasta and, of course, pizza. Both are famous all over the world, both have made the history of Italian food.

In America pizza usually falls into two categories: thick and cheesy Chicago style or thin and more traditional New York pizza. In Italy pizza also falls into two distinct categories: Italian pizza and the rest of the world. It might seem silly considering the basic ingredients, but one taste of a true Italian pizza and that’s it. You will never feel the same about this simple and delicious food again.

Pizza in its most basic form as a seasoned flatbread has a long history in the Mediterranean. Several cultures including the Greeks and Phoenicians ate a flatbread made from flour and water. The dough would be cooked by placing on a hot stone and then seasoned with herbs. The Greeks called this early pizza plankuntos and it was basically used as an edible plate when eating stews or thick broth. It was not yet what we would call pizza today but it was very much like modern focaccia. These early pizzas were eaten from Rome to Egypt to Babylon and were praised by the ancient historians Herodotus and Cato the Elder.

Derivation of the Term “Pizza”

The word “pizza” simply means “pie” and is a Southern Italian derivative of the Roman term picea, both a bread itself and the ash-blackened underside of the Roman bread called placenta. Some say this term eventually evolved into “piza,” then “pizza.” Similarly, another flat bread, pitta, thought by some to have been introduced to southern Italy during the sixth-century Byzantine conquest, may also have influenced the modern day pronunciation of “pizza.”

The common belief is that Italians invented pizza, but its origin goes back to ancient times in the Middle East. Babylonians, Israelites, Egyptians, Armenians, Greeks and Romans, and other ancient cultures ate flat, unleavened bread cooked in mud ovens. The Greeks, Romans, and Egyptians were eating the bread topped with olive oil and native spices (what is today called focaccia). But Italy’s version of the dish, especially from Naples, is the one we are familiar with – with tomato, cheese, and other toppings and seasonings. Supposedly, this pizza was first created by the baker Raffaele Esposito in Naples. His creation was immediately a favorite, and Esposito was called to make a pizza for the visit of King Umberto and Queen Margherita of Italy in 1889. The first known pizza shop was the Port ‘Alba in Naples, which opened in 1830 and is still open today. Pizza spread to America, England, France, and Spain but it was little-known in these countries until World War II. In occupying Italian territory, many American and European soldiers tasted pizza. In America, Italian immigrants sold pizza in their stores and the first pizzeria was opened in 1905 by Gennuardo Lombardi at 53 1/3 Spring Street in New York City. The origin of the word pizza is uncertain. It is Italian for ‘pie’ and may have come from Latin pix ‘pitch’ or Greek pitta.


Types of Pizza


This scrumptious version of pizza, which literally translates into “meat with dough,” is brought to you by the Lebanese (other parts of the Middle East call it by other names) and is made with minced onions, usually ground lamb, cumin and yogurt. If you have never tried it, you really must! Soo delicious.


The pizza Margherita is just over a century old and is named after HM Queen Margherita of Italy, wife of King Umberto I and first Queen of Italy. It’s made using toppings of tomato, mozzarella cheese, and fresh basil, which represent the red, white, and green of the Italian flag.


Calzone means ‘stocking’ in Italian and is a turnover that originates from Italy. Shaped like a semicircle, the calzone is made of dough folded over and filled with the usual pizza ingredients.


Many people think that strombolis and calzones are identical. However, this is not really the case. According to WIKI, “there are several theories regarding the origin of the stromboli. Romano’s Italian Restaurant & Pizzeria claims to have originated it in 1950 in Essington, Tinicum Township, just outside of Philadelphia, by Nazzareno Romano. Others claim a stromboli sandwich with chili sauce was invented by Mike Aquino, Sr., in Spokane, Washington, named after the movie Stromboli starring Ingrid Bergman, in 1954.


This is your basic flat bread with oil, tomato, garlic, and oregano. In Italy, back in the old days, it was stored on voyages so that sailors (marinai) could make pizza away from home.


The Neapolitan hails from Naples and is the basis for our modern-day American pizza. Originally, the Neapolitan pie was served sans cheese. But around 1889, that seems to have changed when the Royal Palace commissioned the Neapolitan pizzaioloRaffaele Esposito to create a pizza in honor of the visiting Queen Margherita. That’s how the plain pizza morphed into the Margherita.


Unlike most pizzas, deep dish is eaten with a knife and fork. It hails from Chicago and the best story I found about its origin comes from an article dating back to 1943 from the Chicago

             Benefits of Pizza

One family favorite that you can easily make healthier is pizza. To begin with, pizza is considered to be the baked pie with a crisp yeast dough covered with tomato sauce, cheese, and often other toppings, such as vegetables. However, today pizza comes in many shapes and flavors. Who would have thought pizza could be served as a pocket, turnover, on a stick or in a deep dish like a pie, and still be a healthy snack?

You and your family will be glad to hear that pizza is perfect for a quick and nutritious meal or healthy snack. In July, I wrote about the health benefits of lycopene, which is found naturally in low-fat foods like tomatoes and tomato sauce. That’s why it was no surprise that Italian scientists claimed that eating pizza once a week can protect against some cancers. The study of 8,000 people found that those who ate pizza as a healthy snack one or more times a week were several times less likely to get mouth and colon cancer than those who chose other meals. The tomato is suspected to be behind the results which were that pizza lowered esophageal cancer by 59%, colon cancer by 26% and mouth cancer by 34%. That’s why a vegetable pizza with a light sprinkling of cheese can be part of a healthy lifestyle.


             Side Effects Of Consuming Pizza:

Over eating pizzas may raise your blood cholesterol levels and make you prone to heart diseases.

The saturated fats in the main crust of pizzas may block your arteries and cause serious problems like myocardial infarction (heart attack).

The high calorie content of the pizzas may contribute to your weight gain and make you obese.

The carbohydrates of the pizzas have a very high glycemic index, which is capable of causing a reasonable effect on your blood glucose levels.

Being high in salt content pizzas may also raise your blood pressure levels.


             Difference Between Hand Tossed & Pan Pizza

Hand-Tossed Pizza

When making a hand-tossed pizza, you knead the dough until it is tender. After kneading, you repeatedly tosses the dough into the air to stretch and aerate it so the finished crust will be tender. After the dough is shaped, it is pressed into the pan before being covered with sauce, cheese and toppings.

Pan Pizza

Also called Chicago-style pizza or deep-dish pizza, pan pizza was invented at Pizzeria Uno in Chicago in the 1940s. For this you build the thick crust directly in a deep pie pan and partially bake it before adding cheese, meat and other toppings. It is then returned to the oven to finish baking. Pan pizza is usually eaten with a fork.
